Yield: Four generous servings
2 | loaves | Cuban bread or substitute French bread loaves | |

1/2 | lb. | Swiss cheese, sliced | |

1 | lb. | ham, tavern or sweet | |
|
|||
1 | lb. | deli roast pork, sliced or prepare your own (see below)* | |
|

sliced pickles | |||

1/2 | lb. | salami | |
|
Preheat griddle or heavy cast iron pan on medium heat and lightly grease. Cut loaves in two, then slice in half and spread open. Layer ingredients on one side of open bread in the following order: Swiss cheese, ham, roast pork, pickles and salami. Place remaining bread half on top of meat.
Place one or two sandwiches on the preheated griddle. Use a spatula, heavy iron skillet or bacon press to flatten the sandwich. (You really want to smash the sandwich, compressing the bread to about 1/3 its original size.) Grill the sandwiches two to three minutes on each side, until the cheese is melted and the bread is golden. Make sure your griddle is not too hot, otherwise the crust will burn before the cheese is melted. Slice the sandwich diagonally and serve.
